NOTE: I spend my Wednesdays Unplugged from appointments. Itâs my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian âQuote Cupâ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipesâŚand love getting recipes you would like to share!
This Wednesday was our 48th wedding anniversary and instead of gathering at our house for dinner for family night, our son treated us to a fabulous dinner at Lat 14 Asian Eatery to celebrate… it was awesome!
RECIPE OF THE WEEK
Our daughter-in-law made this cake for Mother’s Day. She said it’s her favorite… both delicious and easy!
BROWNED BUTTER CAKE with browned butter frosting
CAKE
- 1 cup unsalted butter, browned
- 1 box yellow or white cake mix
- 4 eggs
- 1 cup milk
- 9 x 13 baking pan
Preheat oven to 350 degrees F. Liberally spray pan with cooking spray and set aside.
In a pan on medium high heat place your butter. While stirring let it melt completely, and it will start to bubble up. Once the bubbles subside, watch carefully for brown flecks to start forming. When there is a nutty aroma and the butter has started to turn a deep golden brown remove from heat and carefully place in a metal bowl to cool slightly.
Once the butter has cooled a bit, add the cake mix, water, eggs and mix until thoroughly combined.
Pour batter into prepared pan and bake for about 30 minutes, or until it springs back to the touch. Remove from oven and let cool completely before frosting.
FROSTING
- 1 stick of unsalted butter, browned
- 4 cups powdered sugar
- 1 tablespoon vanilla extract
- 1/3 cup milk or half & half
Brown butter the same way as above and set aside to cool for about 15 minutes.
With an electric mixer with a paddle attachment, add browned butter to the bowl, then add sugar 1 cup at a time until blended.
Now add vanilla and milk and continue mixing until well combined.
Using a spatula, even frost your cake, cover with aluminum foil and chill in the fridge for at least an hour for easier slicing, then enjoy!
