NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
We had two grandkid sleepovers recently, when we hung out together and did a variety of things… all with no snow! Cookie-baking always seems to be a requirement, and this time they also helped Papa John work on a chair.
RECIPE OF THE WEEK
This is the recipe I made with our granddaughter last weekend. Very simple, basic sugar cookies from Taste of Home… with delicate flavor and soft, melt-in-your-mouth texture.
AMISH SUGAR COOKIES
- 1 cup butter, softened
- 1 cup vegetable oil
- 1 cup sugar
- 1 cup confectioner’s sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 4 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
Preheat oven to 375 degrees F.
In a large bowl, beat the butter, oil and sugars. Beat in eggs until well blended. Beat in vanilla. Combine the flour, baking soda and cream of tartar; gradually add to the creamed mixture.
Drop by small spoonfuls onto ungreased baking sheets. Bake until lightly browned, 8-10 minutes. Remove to wire racks to cool.
