NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!
Had a great time with cousin Becky here from NYC last week… always a special visit to the Walker with her. Then we really had an April Fool welcome to spring with snow beginning on Monday and not ending until late Tuesday night! What a rude welcome to family coming from CA… supposed to arrive yesterday, but delayed to today. As frustrating as it is, it is beautiful… and is already melting.
RECIPE OF THE WEEK
Our daughter-in-law made these ‘First-Place Coconut Macaroons’ from Taste of Home for Easter. They were so yummy I asked if I could post them this week… and here they are!
BLUE-RIBBON COCONUT MACAROONS
- 1 1/3 cups sweetened shredded coconut
- 1/3 cup sugar
- 2 tablespoons flour
- 1/8 teaspoon salt
- 2 large egg whites
- 1/2 teaspoon vanilla
In a small bowl, combine the coconut, sugar, flour and salt. Add egg whites and vanilla; mix well.
Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 325 degrees F for 18-20 minutes or until golden brown. Cool on a wire rack.
