Wednesdays Unplugged – Spinach Dip

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

This past week has been a big one for grandkids Kennedy and Khalen. Kennedy got the red plate last week because she received  her acceptance letter for Winona State next fall… and Khalen’s traveling basketball team won first place in their tournament last weekend. Sad news followed on Monday this week when their other grandma passed away. Our hearts go out to our ex-son-in-law and his family… it is never easy to lose a dear mother. I lost my mother 7 years ago today, on Valentine’s Day.

RECIPE OF THE WEEK

This week’s recipe is an old standby, one that I was hungry for last week…. spinach dip, not spinach artichoke dip. The recipe has always been on the Knorr dry vegetable soup mix package… but when I picked it up this time I noticed it was different from the recipe I have used for years so decided to include my old standby on my recipe card in my collection here.

SPINACH DIP

  • 10 ounce package frozen chopped spinach
  • 1 1/2 cups sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup miracle whip
  • 1 package KNORR vegetable soup mix
  • 8 ounce can chopped water chestnuts
  • 3-5 chopped green onions

Thaw and squeeze the spinach until it is dry. Add other ingredients, mix and refrigerate at least 2 hours before serving.
