NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
Football season has begun and we went to our grandson's first junior high football game this week. It was fun watching this new phase begin.
RECIPE OF THE WEEK
This is a super easy way to prepare a tasty one-dish salmon meal.
SIMPLE ONE-DISH SALMON MEAL
- 12 ounce bag green beans
- 1 pound salmon fillet
- Baby red potatoes
- Olive oil
- Salt and pepper to taste
- Fish seasoning, 'Gone Fishin' or other to taste
Heat oven to 400 degrees F. Cut potatoes into wedges (halves or quarters depending upon size) and toss with olive oil, salt and pepper to coat. Lay them in large flat baking dish, cover with aluminum foil and bake for 30 minutes. Toss green beans with salt, pepper and olive oil and add to pan with potatoes, covered. Bake another 15 minutes, then remove foil and clear a space in the center for the salmon. Drizzle with olive oil and season with fish seasoning. Bake uncovered about another 15 minutes and serve.
