We decided to look for a new place for brunch as we drove through downtown Minneapolis on Sunday. We were delighted to find that Red Cow opened a North Loop location about a year ago… and embarrassed that we didn't know about this location before!
Located just north of Washington on 1st Avenue in the shadow of VELO apartments, this was a great place to stop… I expect we will be back.
As I always do when I try someplace new I ask the server for recommendations. He didn't stop for a moment before recommending Chilaquiles – barbacoa beef & poached eggs, ranchero sauced corn tortillas, cheddar cheese, chipotle Hollandaise. Hashbrowns Shown in the photo above, the beef and hashbrowns were a nice hidden surprise which came into view and mouth as I ate!
