Wednesdays Unplugged – Berry Trifle

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

This has been quite the week… had a mastectomy on Friday, and have accepted offers on five listings since then… including reviewing 13 offers on a single property! All is well, now ready for some rest…

RECIPE OF THE WEEK

This week's recipe comes from good friends who made this for Easter… looks to me like it could also make a good treat for Mother's Day! Use regular or lo-fat versions as desired.

BERRY TRIFLE

  • 1 1/2 cups cold milk Trifle1
  • 1 ounce package instant vanilla pudding mix
  • 1 cup (8 oz) vanilla yogurt
  • 6 ounces Neufchatel cheese (or cream cheese)
  • 1/2 cup sour cream
  • 2 teaspoons vanilla
  • 1 1/2 cups whipped cream
  • Lady fingers (or angel food cake cut into cubes)
  • 1 pint EACH blackberries, raspberries and blueberries

In a small bowl, whisk the milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set.

In a large bowl, beat the yogurt, cheese, sour cream and vanilla until smooth. Fold in pudding mixture and 1 cup whipped cream.

Line bowl with lady fingers and layer with filling and berries. Top with whipped cream. Serve immediately or refrigerate.
