Wednesday Unplugged – Butternut squash pizza with feta, pineapple and red peppers

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!


This week was our son's birthday and he got depression glass plates to go with the plates his wife got last week. But the big story of the week was our grandson. His basketball team took first place in the state 5th grade basketball tournament last weekend, winning all four games they played in that tournament… way to go, Royals!


This week's recipe was actually our daughter-in-law's birthday dinner selection last week. We used Rhode's frozen pizza dough and chopped the ingredients. The recipe below was to serve 2-3, we doubled it.

BUTTERNUT SQUASH PIZZA with feta, pineapple and red peppers

  • Pizza-squash1 small butternut squash, peeled and cubed (about 2 cups)
  • 1/2 cup coconut milk
  • 2 tablespoons curry
  • salt and pepper
  • olive oil
  • pizza dough
  • red pepper, sliced
  • red onion, thinly sliced
  • crumbled feta cheese
  • pineapple, cubed
  • cilantro, finely chopped

Preheat oven to 400 degrees F. Place butternut squash on a baking sheet covered with tin foil and sprinkle about 2 tablespoons or so of olive oil and salt and pepper. Stir to coat and place in oven to bake for 35-40 minutes, or until squash is fork tender and slightly browned. Remove from oven and let cool. Bring oven temperature down to 350 degrees F.

In a food processor, blend cooked squash, curry and coconut mile until very smooth. Roll pizza dough out to desired thickness and place on a baking sheet. Spread squash mixture all over dough. leaving a 1/2 inch for crust. Sprinkle pepper, onion, cheese and pineapple on top. Place sheet with pizza in the oven and let cook for 15-25 minutes. The cheese will be slightly melted, crust will be fully cooked and browned on the bottom. remove from the oven and sprinkle with cilantro to serve.
