NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
Our grandson's baseball team has been on a winning streak and he has been a key player… his biggest strength is his amazing speed and agility! Tuesday night they play the last game of the tournament, vying for 1st place! I am writing this post in advance this week because we leave on a road trip to Colorado via the Black Hills immediately after their championship game. He was worried he maybe shouldn't try to win because that might mean we wouldn't be able to go on the trip (we had planned to leave earlier)… we told him not to worry, to go ahead and win!
RECIPE OF THE WEEK
Most of our family loves asparagus, and it seems like everything taste better on the grill. This recipe from Paula Deen was a good one. We used only one skewer… next time we will know better and use two skewers to keep them from spinning around on the skewer.
- 1 pound asparagus
- 3 tablespoons olive oil
- 2 cloves garlic, finely minced
- 1 teaspoon grated lemon zest
- 1/4 teaspoon paprika
- Salt and freshly ground black pepper
Trim asparagus. In a small bowl, combine oil, garlic, zest and paprika and stir with a fork. Lay asparagus side by side and pierce on 2 wooden skewers to form a raft. Cook to desired tenderness and season with salt and pepper.
