 NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

RECIPE OF THE WEEK
 
I made a pretty amazing Quiche Lorraine last week, recipe from The Flour Sack. It took all afternoon to make it and was delicious, but what I am going to share today is the simple salad that I served next to it… simply greens and a balsamic dressing from Emeril Lagasse and foodnetwork.com.
 
SIMPLE SALAD
  • Favorite salad greens Quiche1
  • 1/4 cup balsamic vinegar
  • 2 teaspoons dark brown sugar
  • 1 tablespoon chopped garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 cup olive oil

Beat the vinegar in a bowl with the sugar, garlic, salt and pepper until the sugar and salt dissolve. Then beat in the oil by droplets, whisking constantly. (Or place all the ingredients in a screw-top container and shake to combine.) Toss a few tablespoons of the dressing with the salad greens and serve immediately.
