Wednesdays Unplugged – Jeri’s Popper Dip

 NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Basketball2013-1

Last weekend was our grandson's first traveling basketball tournament… quite a first experience, with two games on Saturday and the final one on Sunday. I was amazed watching them play… hard to believe they are only in 4th grade! His team won their first game, lost the next two but the last game was very close. They have many more to go, and much to learn… but off to a good start, learning as much about what to expect as playing basketball. In between games, our daughter happily cuddled the baby sister of one of the players. Today we close on the sale of the house that was our daughter's home for 11 years… time to close the book on that chapter of her life and move forward to what's next.

RECIPE OF THE WEEK

The stager I worked with for several years sent me a hot dip recipe to share. In her words, "EVERYONE raves about it and I think I've given the recipe away to everyone who tastes it!"  I have been on a quest to find my next awesome dip… unfortunately this wasn't it for our family but it might be for yours, sounds like it is for lots of people!

JERI'S POPPER DIP

  • 8-10 slices crispy bacon, chopped
  • Two 8-ounce packages cream cheese, softened
  • 1 cup mayo
  • 4-6 seeded jalapeno peppers, chopped
  • 1 1/2 cup grated cheddar cheese
  • 1 cup grated mozzarella cheese
  • 1/4 cup green onions

Topping:

  • 1 cup crushed Ritz crackers
  • 1/2 cup grated Parmesan cheese
  • Olive oil

Bake at 350 degrees F for 20-30 minutes until bubbly. Serve with Doritos scoopers.
