Wednesdays Unplugged – Stuffed Jalapeno Appetizer

 NOTE: I spend my Wednesdays Unplugged
from appointments. It's my day to stay home, enjoy cooking and welcome
our kids and grandkids for dinner in the evening. We end our meal with
quotes from the Norwegian 'Quote Cup' passed on to me from my
grandmother. I share a quote and a recipe here each week, and sometimes
some photos of family fun. I love trying new recipes…and love getting
recipes you would like to share!

Jih-welcome day partyIt's hard to believe it has been less than two weeks since my husband retired. He led the group in this photo working together on a big Welcome Day celebration for many years… never enough time, but managing hundreds of volunteers every year seemed effortless to those not involved… sign of a good plan and a good team. This gathering celebrating another job well done took place at the end of my husband's last day of work. Now we are short on time again, getting our daughter's home ready for sale. Photo shoot is tomorrow… which is why I am writing this blog post at 11:00 pm! I have a very real appreciation for what sellers go through when getting ready to sell… let's see what happens this week!

RECIPE OF THE WEEK

This week's recipe was served by the hosts of the party in the photo. Nancy Fury generously shared her reciped for jalapeno appetizers that rapidly disappeared because they were so good! 

STUFFED JALAPENO APPETIZER

  • Jalapeno appetizer1 pound jalapenos
  • 8 ounces cream cheese
  • 1 pound Italian pork sausage
  • Green onions, sliced
  • About 1 cup shredded Parmesan or any cheese you like

Preheat oven to 400 degrees F. Clean jalapenos to your liking. Brown sausage. Mix sausage, green onions, cream cheese and parmesan cheese. Stuff jalapenos. Bake at 400 degrees for 15-20 minutes.
