Wednesdays Unplugged – Oven Roasted Broccoli and Cauliflower

It amazes me how quickly the grass turns green and the trees bud once we get some warmth and sunshine. They also have an immediate impact on us humans… do you notice how everyone seems to be smiling and happy when we get a warm, sunny spring day? Our grandson was excited for his spring concert last week… smiling much more than this picture getting ready for his solo would suggest!

RECIPE OF THE WEEK
This week's recipe is a quick and easy one that was an immediate hit last week… immediately disappeared. I kept seasonings basic for better 'kid' appeal. I cooked it with beef tenderloin so started at 425 degrees, then turned it down to 350 degrees until tender.

OVEN ROASTED BROCCOLI and CAULIFLOWER
  • Roasted broccoli1 pkg broccoli florets
  • 1 pkg cauliflower florets
  • 6 tablespoons olive oil
  • Fresh ground salt and pepper
  • Garlic, optional
  • Parmesan cheese, optional

Heat oven to 425 degrees F. Prepare flat baking dish by spraying with cooking spray or coating with oil. Place florets in one layer in baking dish, cutting florets as needed to get uniform size. Liberally sprinkle with salt and pepper (garlic if desired) and drizzle with olive oil. Roast about 20-25 minutes until pieces pierce easily with a fork. Toss with grated or shredded Parmesan cheese if desired and serve.
