NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

RECIPE OF THE WEEK

This week's recipe is a quick and easy way to prepare salmon, nice that it is now so readily available. The recipe came from Chef Bobo at foodandwine.com… simple and tasty.

PAN-ROASTED SALMON with SOY-GINGER GLAZE

  • Salmon-ginger glazeFresh salmon fillets, about 1 1/2 pounds
  • 1/4 cup soy sauce
  • 1 teaspoon finely grated fresh ginger or 1/2 teaspoon ground ginger
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 2 teaspoons extra-virgin olive oil
  • Freshly ground pepper
  • Cilantro leaves for garnish, if desired

Preheat oven to 350 degrees F. In a small saucepan, combine the soy sauce and ginger and bring to a simmer. Remove from heat and stir in the honey and mustard.

Heat the olive oil in a large nonstick ovenproof skillt. Season the salmon with pepper and add it to the skillet, skin side up. Cook over high heat until golden and crusty, 2-3 minutes. Turn the salmon and spoon the ginger-soy glzae on top. Transfer the skillet to the oven and bake the salmon for 5 minutes, or until cooked through. Using a slotted spatula, transfer the salmon fillets to plates, garnish with cilantro if desired, and serve.
