Wednesdays Unplugged – Homemade Pizza

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Got back from New York City on Monday and have been busy since before I boarded the plane that day! Had a magical week with the perfect variety of performances, museums, food and conversation.

RECIPE OF THE WEEK

This week's recipe was dinner one evening made by my hosts Becky and Jeff… homemade pizza using Birrittella's Pizza Dough made in New York… am anxious to see if it is available here. One package made two pizza crusts shaped to the size of cookie sheets.

HOMEMADE PIZZA

  • 1 package Birrittella's Pizza DoughPizza
  • 1 bunch spinach
  • Garlic
  • Ricotta cheese
  • Mozzarella cheese
  • Baby portabella mushrooms, sliced
  • Green and yellow peppers, cut into strips
  • Red onion, sliced
  • Organic pizza sauce
  • Sliced sausage

Prepare pizza dough according to package directions, dividing dough and forming to make two pizza crusts.

For one pizza, brush crust with olive oil and sprinkle with shredded mozzarella. Pan cook spinach and garlic and place clumps on pizza shell. Add sliced mushrooms and clumps of ricotta cheese. Sprinkle with more mozzarella.

 For the other pizza, spread pizza sauce on crust, top with sliced sausage, pepper strips, sliced onions and shredded mozzarella cheese.

Bake according to pizza crust package directions.
