Wednesdays Unplugged – Scandinavian Almond Cake

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Npt-kpt-airport2This week is spring break for our daughter's son. They took off yesterday for Denver to visit her best friend since 4th grade… one of those longtime friends that you can call up at 4 a.m. She said it was snowing when they landed… they may see the most snow they have seen all winter on spring break!

RECIPE OF THE WEEK

This week's recipe is a staple in many families of Scandinavian descent, although I didn't grow up with it even though I am of 100% Norwegian heritage. It is perfect for a buffet table or for a coffee/tea break. The photo I am sharing is of the pan, which is key for this cake… I got mine at a Scandinavian specialty shop but you can even order them online at Target.  Be sure to let the cake bake long enough, edges must be golden brown.

SCANDINAVIAN ALMOND CAKE

  • 1 1/4 cup sugarAlmond cake pan
  • 1 egg
  • 1 1/2 teaspoons pure almond extract
  • 2/3 cup milk
  • 1 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 cup melted butter or margarine
  • Sliced or chopped almonds
  • Powdered sugar

Preheat oven to 350 degrees F.  Spray pan with cooking spray and sprinkle bottom with sliced or chopped almonds if desired.

Beat well sugar, egg, almond extract and milk. Add flour and baking powder, mix well. Add melted butter or margarine and mix well.

Pour batter into pan and bake for 40-50 minutes, until edges are golden brown. Cool thoroughly in pan, cake will break if removed too soon. Invert pan on serving plate to remove when completely cook. Sprinkle with powdered confectionary sugar and serve.
