NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Tonight will be a special family night. Instead of gathering at our house for dinner, we will be gathering at my mother's nursing home for a private holiday lights tour for my mother and our family sponsored by Hospice of the Twin Cities. There is nothing quite like looking at holiday lights to get into the holiday spirit… we are looking forward to a special evening!
RECIPE OF THE WEEK
One of the staff on my mother's floor was excited to share this puff pancake recipe on a recent visit. She said one of her daughter's friends remembered how her grandparents always used to make this as a special treat. It is so simple and oh, so delicious… thank you for sharing, Toni!
- 1/3 cup butter
- 4 eggs
- 1 cup whole milk
- 1 tablespoon sugar
- Optional: top with powdered sugar, lemon juice, maple syrup, fruit
Melt butter in 10" ovenproof skillet in oven heated to 400 degrees F.
Mix together eggs, milk and sugar. Pour in melted butter, leaving about 1 tablespoon in skillet to coat. Mix thoroughly and pour into skillet. Bake in oven 15-20 minutes, until puffed and golden.
