NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

This has been a busy week… big 'Welcome Days' fair with rock wall climbing, pony rides, mini donuts… Papa John loved showing off granddaughter Sina… hard to believe that last year at this time she was just home from the hospital
This past week has also been busy on the real estate front… accepted purchase agreements on two listings, which means I have also been busy helping sellers find a new home!
RECIPE OF THE WEEK
A college roommate introduced me to this recipe from her aunt years ago and it is still a breakfast staple at our house… guests keep asking for the recipe, they are so light and delicious. I freeze leftovers in single serving packets to microwave for a quick breakfast.
ALPHA'S PANCAKES
- 4 eggs
- 1 1/2 cups sour cream
- 2 cups buttermilk
- 2 cups flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
Mix and cook on ungreased griddle. Add blueberries or other fruit if desired.
