NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
QUOTE OF THE WEEK
"It has taken me all my life to understand it is not necessary to understand everything." ~ Rene Coty
Today is the last day of summer. Fall officially begins at 11:09 pm tonight and it sounds like it may be coming in with a boom… with heavy rains and flash flood potential. That can't dampen high spirits for the Twins… the all-time season attendance record set back in 1988 is expected to fall at today's game.
RECIPE OF THE WEEK
This week's recipe is a salad that was a big hit last week. Our son-in-law even asked for the recipe!

1/4 cup sugar
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon Beau Monde seasoning or celery salt
- 1 bag torn Romaine lettuce
- 2 apples, chopped
- Whole cashews
Mix sugar, vinegar, oil, garlic and Beau Monde seasoning. Set aside or refrigerate until ready to serve. Toss lettuce, apples and dressing. Add cashews to taste.
