RECIPE OF THE WEEK
This week’s recipe is a delicious black bean and corn salsa, great with tortilla chips, tacos, quesadillas, etc… found online at kaboose.com.
BLACK BEAN and CORN SALSA
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (frozen, canned or fresh cooked)
- 1/2 medium sweet red pepper, chopped
- 1/2 medium red onion, chopped
- 1/2 cup ripe tomato, finely diced
- 1/4 cup chopped cilantro
- 4 green onions, chopped
- 2 fresh jalapeno peppers, seeded and minced
- 2 cloves garlic, minced
- 2 tablespoons lime juice
- 1 teaspoon salt
Mix all ingredients together and refrigerator at least an hour before serving.
