Wednesdays Unplugged – Creamy Garlic Mashed Potatoes

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end ou r meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

We have been having some beautiful winter days lately with that crystal clear sky that can only be found in the winter. It hasn't even been too cold… below zero to keep away the slush but warm enough to almost feel a touch of spring in the air.

RECIPE OF THE WEEK

I had a hard time deciding which recipe to share this week, I have accumulated a list of recipes I want to keep and this is becoming my repository. Our daughter-in-law said she would like to have this recipe for mashed potatoes, so it is the winner this week. It warmed really well for leftovers, so I am thinking it could be a do-ahead…very creamy and tasty, and not dry when re-heated.

CREAMY GARLIC MASHED POTATOES

  • 3 pounds 'B' size red potatoes
  • 1 1/4 cup half-and-half
  • 4 cloves garlic, crushed
  • 2/3 cup fresh shredded Parmesan cheese

Wash and cut potatoes into quarters, leaving skin on. Place in a large saucepan or Dutch oven, cover with water and add a heaping tablespoon table salt to the water. Bring to a boil, then reduce heat to maintain a rolling boil. Cook until potatoes are tender when pierced with a fork.

Heat the half-and-half and garlic. Drain the potatoes, mash, and add the cream-garlic mixture. Stir in Parmesan cheese. Let stand for a few minutes to allow mixture to thicken before serving.
