NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. With Thanksgiving only a day a way I will be spending my day cooking and preparing for the weekend instead of for tonight. We will be here on Thanksgiving, then heading to Wisconsin to spend time with families there…it's always good to be together.
RECIPE OF THE WEEK
This week's recipe was given to me by a friend and the sweet potatoes made me think of Thanksgiving, although this is a far cry from the traditional 'sweet' sweet potatoes I associate with Thanksgiving. I love the flavor combination of sweet potatoes and apples with cinnamon.
SAUSAGE SWEET POTATO BAKE
- 1 pound sausage (any…Italian, hot, etc)
- 1 onion, chopped
- 1-2 cloves garlic
- 3 sweet potatoes or yams, peeled and sliced
- 3+ apples, peeled and sliced
- 2 tablespoons white sugar
- 1/4 teaspoon salt
- 1 tablespoon flour
- 1/2 teaspoon cinnamon
- 1/2 cup water
Brown sausage with onion and garlic. Combine sausage with potatoes and apples in 9 x 13 pan. Mix together sugar, salt, flour, cinnamon and water and pour into pan. Cover and bake at 375 degrees F for 50-60 minutes.
