NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. It seems hard to believe that by the time we finally get into the first week of a 'regular' back-to-school routine, with a string of 80 degrees days, the month of September is already half over!
RECIPE OF THE WEEK
When we went to the Bayfront Blues Festival last month for our annual stay with good Duluth friends, Linda whipped up a delicious coffee cake. When I asked for the recipe she pulled out a vintage, falling-apart edition of Betty Crocker's Picture Cookbook published in 1950. The illustrations are priceless, so I had to share them as well as the recipe. We had the streusel-filled version. When I made it at home, I also threw in some blueberries I had on hand.

BETTY CROCKER'S PRIZE STREUSEL-FILLED COFFEE CAKE
STREUSEL MIXTURE
- 1/2 cup brown sugar (packed)
- 2 tablespoons flour
- 2 teaspoons cinnamon
- 2 tablespoons butter, melted
- 1/2 cup chopped nuts (optional)
COFFEE CAKE
- 3/4 cup sugar
- 1/4 cup soft shortening (or butter)
- 1 egg
- 1/2 cup milk
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Heat oven to 375 degrees F. Grease and flour a 9-inch square pan. Combine streusel mixture in small bowl and reserve. Mix sugar, shortening and egg thoroughly. Stir in milk. Blend dry ingredients and stir into mixture. Spread half of coffee cake batter in pan. Sprinkle with half the streusel mixture. Add the remaining batter and sprinkle remaining streusel on top. Bake 25-35 minutes, until toothpick stuck in the center comes out clean. Serve warm.
