NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. A few weeks ago we attended a staff potluck and one of my husband's co-workers brought a delicious appetizer 'dip'. I put 'dip' in quotes because although it is technically a dip served with tortilla chips, it is so hearty Peggy's Appetizer Dip could almost make a light meal. I have no idea who Peggy is, but Cheryl generously shared the recipe. I made it last week and the big bowl almost disappeared over the course of the evening.
PEGGY'S APPETIZER DIP
recipe from Cheryl Oie
- 1 pound shredded Colby/Monterey Jack cheese (4 cups)
- 4-5 tablespoons chopped fresh cilantro
- 1 can chopped green chilies
- 1 can chopped black olives
- 4-5 chopped roma tomatoes
- 1 bunch chopped green onions
- 1 package Good Seasons Italian dressing
Combine all ingredients except Good Seasons. Prepare Good Seasons dressing according to directions. Pour dressing into mixture and blend. Chill 2-3 hours. Serve with tortilla chips.
