NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. Last week I asked our grandson what his favorite cookie was. He replied, "chocolate". I asked, "chocolate chip"? He replied, no, "chocolate".
RECIPE OF THE WEEK
So…last week I made chocolate chocolate chip cookies for the first time. I figured if one chocolate was good, two could be even better.
CHOCOLATE CHOCOLATE CHIP COOKIES
- 1 cup butter, softened
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups flour
- 2/3 cup cocoa powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups semisweet chocolate chips
Preheat oven to 350 degrees F.
Beat butter, sugar, eggs and vanilla together until light and fluffy. Combine the flour, cocoa, baking soda, and salt; add to the butter mixture and stir until well blended. Mix in the chocolate chips. Drop by rounded spoonfuls onto ungreased cookie sheets
Bake for 8 to 10 minutes, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
