This is Wednesday so it means I will be unplugged and cooking today. In honor of Christmas coming next week (is it really almost here already?!) we will be making lefse today. My husband is the lefse 'pro' so he is taking the afternoon off to roll the delectable rounds. Most of it will likely be gone by the end of the evening…our family loves its lefse!! For those of you wondering 'what in the world is lefse?!', it's basically a Norwegian tortilla made of potatoes, flour, butter and cream. Both my husband and I are of 100% Norwegian descent so it's in the genes! I'll share a recipe and some photos next week.

RECIPE OF THE WEEK
This week's recipe was one of my mother's favorites. A long-time friend remembered it and suggested I share it…so here it is. I often serve it at Christmas time. The cake is good plain with ice cream, but it's a special rich treat topped with warm butterscotch sauce and whipped cream.
APPLE RUM DUM
CAKE
- 1 cup sugar
- 1/4 cup butter (1/2 stick)
- 1 egg
- 2 cups diced apples
- 1 cup flour
- 1 teaspoon soda
- 1/4 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cut chopped nuts, optional
Mix all ingredients in one bowl, in order. Bake in greased 9 x 9 inch pan in preheated 350 degree oven for 45-50 minutes. Top with hot rich butterscotch sauce, whipped cream and/or ice cream.
BUTTERSCOTCH SAUCE
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup butter
- 1/2 cup heavy cream (a must)
Mix ingredients in a saucepan and bring to a boil. Serve hot over Apple Rum Dum.
