RECIPE OF THE WEEK
This week’s recipe is from my cousin in Sacramento, California…yummy lemon bars!
LEMON BARS
from Carole Martinson
CRUST
- 1 1/2 cups flour
- 3/4 cup butter
- 1/4 cup plus 1/8 cup powdered sugar
Mix together and pat into 9 x 13 pan. Bake at 350 degrees for 20 minutes.
FILLING
- 3 beaten eggs
- 1 1/2 cups sugar
- 4 tablespoons lemon juice
- Grated rind of 1-2 lemons
- 3 tablespoons flour
- 3/4 teaspoon baking powder
Mix, pour over crust and bake at 350 degrees for 25 minutes.
FROSTING
- 2 1/4 cups powdered sugar
- 3 tablespoons melted butter
- 4 tablespoons milk or lemon juice
- 1 1/2 teaspoons vanilla
