Wednesdays Unplugged – Frozen Key Lime Pie

A friend (who can be even goofier than our son-in-law hiding behind the palms) shared this week’s recipe years ago and it has become a favorite.

They spend part of their winters in Florida, and the recipe came  from The Mucky Duck restaurant in Captiva. The simple recipe below fits perfectly into a ready-made graham cracker pie crust. Sometimes I make my own crust, put it into a 10-in deep pie plate and double the filling. It also works great to double the filling and split between two purchased pie crusts…it’s great to have an extra one ready in the freezer!

RECIPE OF THE WEEK

FROZEN KEY LIME PIE

from The Mucky Duck restaurant, Captiva, Florida

1 can sweetened condensed milk

1/3 cup key lime juice

3 beaten egg whites

Fold key lime juice into milk, then fold in 3 beaten egg whites. Pour into graham cracker pie crust and freeze overnight.
