RECIPE OF THE WEEK

Crockpot Asian Spareribs

based on recipe #125757 from Recipezaar.com

NOTE: this is a large family-size recipe, which also makes good leftovers

5-6         lbs pork spareribs (boneless preferred if available)

2             Tbsp olive oil

1 1/4     cup pure pineapple juice

3/4         cup light soy sauce

3/4         cup Hoisin sauce

6              Tbsp vinegar

6              Tbsp peanut butter

3/8         cup packed brown sugar

4 1/2     tsp minced garlic from a jar

2 1/4     tsp ground ginger

3/4         tsp red pepper flakes

1              bunch green onions, thinly sliced

Place spare ribs in large crock pot. Whisk together remaining ingredients and pour over ribs. Cook 10-12 hours on low…delicious!

NOTE: can also use sauce as a marinade and cook ribs on the grill or bake in the oven
