Memorial Day weekend always prompts me that the summer season is beginning, even when it isn’t yet quite warm enough. That reminds me of picnics and good old-fashioned decadent bar cookies and chocolate. This recipe is a long-time standby that I just had to make over the weekend. They always seem to disappear very quickly!
RECIPE OF THE WEEK
FROSTED PEANUT BUTTER RICE KRISPIE BARS
1/2 cup light corn syrup
1/2 cup sugar
1 tsp vanilla
3/4 cup peanut butter
3 cups (rounded) Rice Krispies
1 cup (rounded) semi-sweet chocolate chips
1 cup (scant) butterscotch chips
1 drop lemon extract
- Bring syrup and sugar to a boil
- Add vanilla, peanut butter and mix well
- Pour over Rice Krispies in a bowl
- Mix well
- Pat into buttered 9 x 13 pan
- Let cool
- Melt chips in microwave
- Add lemon extract
- Spread over Rice Krispie mixture
- Cool, cut into pieces, and watch them disappear!
