Wednesdays Unplugged – Best Creamed Spinach

NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, along with an update and photos of what has been going on in our lives. I love trying new recipes…and love getting recipes you would like to share!

It’s travelling basketball season again and our grandson’s first tournament of the season was last weekend… it hardly seems possible it is that time of year again. He is in 8th grade so this will be his last year in this excellent program… it has been a good run! It seems fitting to have today’s quote from LeBron James… our grandson named their cat ‘James’ because of him… and yes, he does have fun playing the game!

RECIPE OF THE WEEK

I have always been a spinach lover… in fact, my favorite way to eat it is still to cook it fresh as I did out of my mother’s garden on the farm where I grew up in North Dakota. For those who like a fancier side dish, this recipe based on one from The Novice Chef was really good… she called it the best creamed spinach, ever!

BEST CREAMED SPINACH

  • Three 10-ounce packages frozen chopped spinach
  • 2 tablespoons butter
  • 1 medium yellow onion, diced (or 2 tablespoons instant minced onion)
  • 6 large cloves garlic, minced (or 1 tablespoon prepared minced garlic)
  • 4 ounces cream cheese
  • 1 cup heavy cream
  • 1 cup shredded Mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Cook spinach in microwave according to package directions. Squeeze out excess water and set aside.

In a large skillet over medium high heat melt butter and saute onion until translucent. Add garlic and cook for 30 seconds, then add cream cheese and stir until melted.

Add heavy cream and cook for 2 minutes. Add Mozzarella cheese, Parmesan cheese, salt  and pepper. Stir until combined.

Fold spinach into cream sauce and cook for for additional minute to reheat spinach.
