NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Tonight was our last show Children's Theater production of the season, but everyone voted to come back again next season!  This season's last show was 'A Year with Frog and Toad'… premiered at CTC in 2002, then went on to Broadway where it was nominated for 3 Tony Awards… and back here again to end this season. The visual staging was impressive… so much with only 5 actors… loved their use of silhouettes.

 
RECIPE OF THE WEEK
 
This recipe came from a cookbook about 25 years old, NO RED MEAT by Brenda Shriver and Ann Tinsley. I had this recipe tagged for many years, used it for the first time a few weeks ago. Recipe notes say their grandson loves fish prepared this way… so did I! I used a whole egg instead of only egg white and butter instead of margarine. Forgot to take a photo!
 
BRENDA'S BREADED FISH
  • 3 fillets white fish, about 12 ounces
  • 2 cups loosely packed fresh bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1 egg 
  • 1 tablespoon water
  • 1/8 teaspoon lemon pepper
  • Dash of garlic powder
  • 1 tablespoon butter, melted
  • Parsley sprigs, lemon wedges to garnish if desired
