NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

This was a sports week… watching our granddaughter in gymnastics… watching our grandson play basketball… and taking our grandson to Sportsology at the Science Museum… pretty amazing watching him race against a Tyrannosaurus Rex!

RECIPE OF THE WEEK

This week's recipe comes from a friend who brought them to an hors d'oeuvres buffet. She kindly shared the recipe so I could share them on family night. Thank you, Janet!

SPINACH TORTILLA ROLLUPS Spinach tortilla rolls

  • Two 10-inch garden spinach herb tortillas
  • 8 ounces cream cheese, softened
  • 4 ounces crumbled feta cheese (not low fat)
  • 3-4 ounces dried cranberries
  • 2-4 green onions, sliced

Mix softened cream cheese and feta until blended. Stir in cranberries and green onions. Spread half of mixture on each tortilla; roll up tightly. Chill at least one hour before slicing and serving.
