NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
It's fun having season tickets to Children's Theatre this year… latest show was Elephant & Piggie's "We Are in a Play!" It was great fun hearing our granddaughter make the comment, 'they are doing all the books!'
- 1-2 seedless cucumbers
- 2 cups whole-milk plain Greek-style yogurt
- 3 cloves garlic, smashed
- 2 tablespoons chopped fresh mint
- 2 teaspoons lemon juice
- 1 tablespoon extra-virgin olive oil
- Freshly ground salt and pepper, to taste
Grate the cucumbers and set in a colander in the sink to drain for at least 20 minutes.
In a medium bowl, beat together the yogurt, garlic, mint, lemon juice and olive oil. Stir in the drained grated cucumbers. Season to taste with freshly ground salt and pepper. Cover and allow to rest in the refrigerator for at least 30 minutes or overnight before serving.
