NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
We gathered at the Minneapolis Children's Theatre for the next show in our season series this week only to learn they split the group in two for this show and our tickets are for next week!! So the kids made their own show on the grounds, each claiming their own podium for 'Hunger Games'.
RECIPE OF THE WEEK
This is a super simple way to make pulled pork to use in a multitude of ways. We used it for pulled pork sandwiches with asian barbecue sauce and Barbecue Betty's awesome coleslaw… for nachos… with macaroni and cheese… and…
ALL-PURPOSE PULLED PORK
- 3-4 pound boneless pork shoulder
- 1 tablespoon kosher salt
- 2 teaspoons ground black pepper
- 1 tablespoon cayenne pepper
- 1 onion, roughly chopped
- 4 cloves garlic, finely minced
- 1/2 teaspoon chicken bouillon, dissolved in 1/2 cup water
Rinse the pork, place on a cutting board and pat dry with paper towels. Mix the salt, black pepper and cayenne pepper and rub into the pork. Place the pork in a slow cooker, scatter the onion and garlic over the pork and add the chicken bouillon. Cook until the meat easily pulls apart with a fork, on high or low cycle per your slow cooker. Turn off the slow cooker and transfer pork to a platter. Use two forks to shred the meat and keep on hand to serve in many different ways, such as pulled pork nachos.
