NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
Back in Minnesota, with a bright puzzle from Palm Springs Modernism Week. Thanks to our grandson for bringing his cello to family night this week. Our daughter had big news… got engaged while we were gone!!… and is celebrating her birthday this week!!
RECIPE OF THE WEEK
This week's recipe is a carryover from Palm Springs week… delicious baked pancake good for breakfast or any other meal of the day… thank you, Carolyn and Alpha!
OVEN APPLE PANCAKE
- 1-2 large apples, core and slice very thin
- 1/2 cup milk
- 1/2 cup flour
- 3 eggs
- 3 tablespoons sugar
- Salt
Saute sliced apples in butter until tender. Place in greased 9-10" pie plate. Mix rest of the ingredients in blender, making sure flour is well incorporated.
Bake 15-20 minutes at 350 degrees F. Remove from oven and dot with butter and cinnamon/sugar. Bake another 10-15 minutes until done. It puffs up, but will fall a bit when you pull it out.
This recipe serves 3… can add an extra egg and increase other ingredients slightly to serve 4.
Serve with fresh fruit/syrup/sour cream.
