NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
Last weekend marked the beginning of our Christmas celebrations… The Wizard of Oz at the Children's Theater with our whole family… mother-daughter night at The Nutcracker with our daughter taking me this time… Breakfast Club surprise birthday celebration… Roseville String Ensemble's annual Christmas community singalong that has been launching our holiday season for 18 years!
RECIPE OF THE WEEK
I was introduced to 'Crunchies' by my Aunt Rena about 50 years ago. They became Christmas favorites of our family, who re-named them 'Haystacks'. Our oldest granddaughter asked for my mother's meatloaf this week, and I had to have haystacks for dessert because they are also her favorites. I decided to call them 'Haystack Crunchies' to honor both the original and family traditions.
HAYSTACK CRUNCHIES
Melt butterscotch chips, add peanut butter. Pour over chow mein noodles, mix to coat and quickly drop by spoonfuls onto parchment paper. They will harden as they cool.
