NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
Tis the season of concerts and tournaments, the season of light… beautiful National Lutheran Choir concert at the Basilica of St. Mary… grandson's basketball tournament (they were consolation champs)… Valley Chamber Chorale concert… dinner with dear friends… granddaughter's choir concert… it truly is time for our hearts to glow with gladness.
RECIPE OF THE WEEK
Our family happens to love breakfast any time of day and I was intrigued by these simple cinnamon applesauce pancakes from Taste of Home's Breakfast and Brunch Collectors Edition. The note said it was debuted at Christmas, and was also a hit at church breakfasts… sounded like a recipe to try. The batter is very thick… made the mistake of adding more liquid the first time we made it… don't… it is supposed to be a very thick batter.
CINNAMON APPLESAUCE PANCAKES
- 1 cup complete buttermilk pancake mix
- 1 teaspoon ground dinnamon
- 1 cup chunky cinnamon applesauce
- 1/4 cup water
- Maple syrup and butter for serving
Combine pancake mix and cinnamon. Add applesauce and water; stir until until moistened.
Pour batter by 1/4 cupfuls onto a greased hot griddle… turn when bubbles form on top. Cook until the second side is golden brown. Serve with syrup and butter.
