Wednesday’s Unplugged – Easy Refrigerator Pickles

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

My friend Linda and I have been celebrating our shared birthday together for over 20 years. This year we were both so busy we got together a month late! We suggested having dinner at one of our new favorite restaurants, The Loop in St. Louis Park's West End. We were seated close to the kitchen where I waved to the chef (one of my clients), who came over to wish us Happy Birthday. Imagine my surprise when an appetizer of Buffalo Chicken Wontons was delivered to our table… they were fabulous!  My birthday buddy and I both had the Salmon Rice Bowl which I have had before… I vow to try something different next time, but it's hard because this entree is so good. After dinner two amazing desserts magically appeared at our table… Vanilla Bean Creme Brulee and Grasshopper Cheesecake. It was a birthday dinner to remember!

RECIPE OF THE WEEK

When our daughter-in-law brought a jar of to Wednesday night dinner, they looked and tasted so good that I asked if I could share them. She said yes, but it wasn't her recipe… she got it off the Internet… isn't that where all recipes come from these days?!

EASY REFRIGERATOR PICKLES Refrigerator pickles

  • 1 1/3 cups white sugar
  • 2 tablespoons salt
  • 1 cup white vinegar
  • 6 cups peeled and sliced cucumbers
  • 2 cups sliced onion

Stir sugar, salt and vinegar together in a plastic container with a lid until sugar is mostly dissolved. Place cucumbers and onion in the vinegar solution; stir to coat. Cover container and refrigerate for at least 2 days, stirring occasionally.
