NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
We ended up at Buca for Easter this year because our hosts were sick all week. Grandkids and John's cousin Dick were busy drawing most of the time… brought home some fun treasures.
RECIPE OF THE WEEK
I found a recipe for thin and lacy pancakes in the Food Network magazine which I planned to make last week… but dinner was called because of sickness so we had them this week instead. They were very good, crepe-like. The recipe called for them to be folded in fourths to serve. We just piled them in a stack on a plate and folded them for individual servings… of course I didn't get a photo of that. Served them with blueberries.
THIN AND LACY PANCAKES
- 2 cups milk
- 2 large eggs
- 4 tablespoons unsalted butter, melted and cooled, plus more for brushing
- 1/2 teaspoon pure vanilla extract
- 1 1/4 cups all-purpose flour
- 3 tablespoons sugar
- 1/4 teaspoon salt
- Butter and maple syrup or jam for serving
Whisk the milk, eggs, melted butter and vanilla in a large bowl until combined. Add the flour, sugar and salt; whisk until the batter is smooth, with no lumps.
Heat a medium nonstick skillet over medium heat; lightly brush with butter. Add 1/4 cup butter; swirl the skillet to coat the bottom with a thin layer of the batter. Cook until set on top and lightly browned around the edge, about 1 1/2 minutes. Gently lift and flip the pancake with a rubber spatula; cook until just browned on the other side, about 15 more seconds. Transfer to a plate and repeat with the remaining batter (do not brush the skillet with more butter). Fold into quarters to serve if desired.
