Wednesdays Unplugged – Crockpot Honey Garlic Meatballs

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

This Wednesday was one where both John and I attended an excellent real estate seminar all day so we didn't have any time to cook… just got home about 10 minutes before the rest of our family started arriving. That meant it was a crockpot day with ice cream sundaes for dessert… you can tell by the looks on the faces of the cousins that dessert was the best part of the meal!

RECIPE OF THE WEEK

I looked for something simple to throw into the crockpot this week and decided to try crockpot honey garlic meatballs and crockpot chicken parmesan… served both with linguine. The meatballs were a hit, the chicken not so much (too mushy for chicken parmesan). The meatball recipe called for cooking 4 hours on low… we were gone for 9 hours, so simply left it on warm all day which worked great.

CROCKPOT HONEY GARLIC MEATBALLS

  • 1/4 cup brown sugar Meatball-honey garlic
  • 1/3 cup honey
  • 1/2 cup ketchup
  • 2 tablespoons soy sauce
  • 3 cloves garlic minced
  • 1 (28 oz) bag fully cooked frozen meatballs

In a medium bowl, mix together brown sugar, honey, ketchup, soy sauce and garlic. Place frozen meatballs in a 3-4 quart crockpot and pour sauce over meatballs. Stir so all meatballs are coated evenly. Cook on LOW for 4 hours, stirring occasionally. Serve as an appetizer, or serve over rice or noodles for a meal.
