NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Still in our birthday marathan… this week we celebrated Kennedy’s ‘Sweet 16’… hard to believe that’s possible!!  She and her 5-year-old cousin showed off their big-eyed plush treasures. Yes, she still loves stuffed animals at 16… and her new one reminded us of her panda painting that was selected to be featured in an art show last year. We made homemade ice cream in her honor… and of course she was the lucky one who got to lick the dasher!

RECIPE OF THE WEEK

I thought I was going to be sharing a recipe for great thin buttermilk pancakes this week, but when I realized my mother-in-law’s homemade ice cream recipe wasn’t featured yet that took priority and the pancakes will have to wait for another week. This has been our go-to recipe for ice cream for years. We always make plain vanilla, but of course you can add whatever else you want. Its consistency is like soft serve when it comes out of the ice cream freezer, can freeze leftovers (if there are any!) for later use. Note: it does contain uncooked eggs

ADELAIDE’S HOMEMADE ICE CREAM Adelaide ice cream

  • 4 eggs
  • 2 1/2 cups sugar
  • 6 cups milk
  • 4 cups light cream
  • 2 tablespoons vanilla
  • 1/2 teaspoon salt

Beat eggs until light, adding sugar gradually and continuing to beat until mixture thickens. Add other ingredients and chill until ready to churn in ice cream freezer… and eat!
