NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
This has been the week of year end concerts. Our granddaughter had her choir concert last night… very impressive choral music program at Hopkins High School with 9 choirs! The auditorium virtually exploded with joyful sound as all the choirs and alumni took the stage for the grand finale! Tonight was our grandson's Peace Program… a theme that all the 4th graders worked on all year. It was another impressive music program that also included skits and many hand folded peace cranes!
RECIPE OF THE WEEK
Our son surprised me with this week's recipe on Mother's Day. It sounds pretty unusual, but I found it quite delicious… not everyone agreed.
CARROT CHEDDAR SANDWICHES
- 2 cups shredded carrot
- 2 cups high quality sharp cheddar cheese, freshly shredded
- 1-2 tablespoons mayonnaise
- Pepper to taste
Put on buttered bread or toast. Super tasty on Kings Hawaiian Sweet Rolls and delicious heated to melt the cheese!
Try adding horseradish or other flavors too!
