Wednesdays Unplugged – Dori’s Cracker Things

"Families are like fudge, mostly sweet, a few nuts. ~ Anonymous

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share.

Xmas break 2013-14

We had a nice, long holiday break this year… two full weeks with no school, followed by school closings on what was supposed to be the first two days back after break because of dangerously cold temperatures and wind chills. There is nothing better than the gift of time… time to read with Grandpa, make buildings with Legos, have a 'girls night out', go to the Mayan exhibit and create designs with blocks… today, January 8, was the first day back to school!

RECIPE OF THE WEEK

I'm not sure why it took our Breakfast Club so long to have a Christmas cookie exchange but this was our first year! One of my favorites was this recipe for 'Dori's Cracker Things'… simple, and oh-so-tasty!

DORI'S CRACKER THINGS

recipe from Dori Lund

  • Dori crackers44 club crackers
  • 2/3 cup sugar
  • 1 cup butter
  • 2.25 ounces sliced almonds

Place 44 club crackers in foil-lined jelly roll pan. Boil butter and sugar 2-3 minutes. Pour over crackers. Sprinkle almonds on top. Bake at 300 degrees F for 22 minutes. Remove from over and rearrange nuts as necessary.

The next is very important or you will have the devil to pay!

Score, remove to sheet of foil with pancake turner – then transfer to paper towel to blot all that good butter. (These may be eaten frozen.)
