NOTE: I spend my Wednesdays Unplugged from appointments. It’s my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian ‘Quote Cup’ passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
We had our semi-annual photo shoot a few weeks ago… love these preview shots of our grandchildren. They must be thinking lots of good thoughts because their faces were shining like sunbeams.
- 1 cup flour
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 tablespooon finely grated lemon peel
- 2/3 cup butter
- 1 egg, slightly beaten
- 4 small tart apples, peeled, cored and sliced (about 2 cups)
- 3/4 cup sugar
- 1 teaspoon cinnamon
- 1 tablespoon milk
GLAZE
- 2 cups confectioner’s (powdered) sugar
- 1 tablespoon plus 2 teaspoons milk
- 1/2 teaspoon vanilla
Combine flour, 1/2 cup sugar, salt and lemon peel. Cut in butter until mixture is like meal, then stir in the egg. Pat half of the crumb mixture (about 1 1/2 cups) into a buttered 9-inch square baking pan. Cover with the apple slices and the 3/4 cup sugar mixed with the cinnamon. Stir the milk into the remaining crumb mixture and spoon or sprinkle over apples. Bake at 375 degrees F for 45 minutes, until apples are tender. Frost with easy glaze.
GLAZE: Combine 1 cup powdered sugar with 1 tablespoon plus 2 teaspoons milk and 1/2 teaspoon vanilla. Add a few drops of milk if necessary to thin more. Frost warm apple bars.
