Wednesdsays Unplugged – Pan-Roasted Salmon with Soy-Ginger Glaze

"Art is not in the eye of the beholder. It is in the soul of the artist." ~
Seth Goden

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Love this painting created by our 3-year-old granddaughter.
Sina paintingIt's a self-portrait of her holding hands with her older brother… lots of soul. I love how freely and confidently she paints and how she chose such bright and vibrant colors… matches her bright and vibrant soul (she's the red one!).

This week's recipe is a quick and easy way to prepare salmon, nice that it is now so readily available. The recipe came from Chef Bobo at… simple and tasty.

  • Salmon-ginger glazeFresh salmon fillets, about 1 1/2 pounds
  • 1/4 cup soy sauce
  • 1 teaspoon finely grated fresh ginger or 1/2 teaspoon ground ginger
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 2 teaspoons extra-virgin olive oil
  • Freshly ground pepper
  • Cilantro leaves for garnish, if desired

Preheat oven to 350 degrees F. In a small saucepan, combine the soy sauce and ginger and bring to a simmer. Remove from heat and stir in the honey and mustard.

Heat the olive oil in a large nonstick ovenproof skillt. Season the salmon with pepper and add it to the skillet, skin side up. Cook over high heat until golden and crusty, 2-3 minutes. Turn the salmon and spoon the ginger-soy glzae on top. Transfer the skillet to the oven and bake the salmon for 5 minutes, or until cooked through. Using a slotted spatula, transfer the salmon fillets to plates, garnish with cilantro if desired, and serve.
