Wednesdays Unplugged – Total Flatbread

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share

We decorated the tree last week, including making shrinky-dink ornaments… watching them shrink was a big attraction. Now it's time for some snow!

RECIPE OF THE WEEK

This week's recipe is from my sister-in-law, but my mother also made this flatbread made with Total cereal all the time. She would cut it into rounds that fit into an oatmeal box!

TOTAL FLATBREAD

recipe from Carol Hensrud

  • Flatbread2 cups flour
  • 2 cups quick oatmeal
  • 1 cup sugar
  • 2 sticks margarine, softened
  • 2 cups Total breakfast cereal – measure before crushing very fine
  • 3/4 cup warm water with 1 teaspoon soda, stir until dissolved

Mix as pie crust the flour, oatmeal, sugar, Total cereal and margarine. Add warm water with dissolved soda. Mix well in the evening. In the morning roll and bake at 350 degrees F for 7 minutes. Store in an airtight container.

We take a little larger than a golf ball size piece of dough to roll for each piece. We put two pans in the oven at a time for 7 minutes total, rotating them from the lower rack to the top rack half way through… so 3 minutes, then rotate for 4 minutes. We us the large jely roll pan and get about 27 pieces. Have fun rolling!
