NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share

It felt good to get together last week with my husband's family at the lake for a few days… an idyllic Norman Rockwell-type Thanksgiving with lots of laughter, lots of lefse, and a dusting of snow.

RECIPE OF THE WEEK

This week's recipe is a simple one that I associate with the holidays as a Scandinavian lutefisk alternative. The recipe comes from Beatrice Ojakangas, whose kitchen and wonderful cooking I remember from the two short years when we lived in Duluth about 25 years ago.

POOR MAN'S LOBSTER (Butter Baked Cod)

  •  
    1 1/2 pounds fresh cod fish fillets
  • 1 cup butter, melted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/8 teaspoon paprika
  • Fresh parsley spring, optional garnish
  • Lemon slice, option for serving

Preheat oven to 375 degrees F. Arrange fish in a shallow casserole, pour half the melted butter over the fillets. Sprinkle with salt, pepper, paprika.

Place the fish in the oven and bake uncovered, basting occasionally until fish flakes with a fork… about 15-20 minutes. Serve with remaining melted butter for dipping.
