Wednesdays Unplugged – Best Lemon Bars

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!

Our son and daughter-in-law went to NYC for a getaway and their kids first stayed with her mother Thurs-Sat, then with us Sat-Monday. What a treat for all three generations!!  They had fun exploring in the woods in our back yard… love the joy in our grandson's face when he found a hollowed tree limb with 4 carefully formed holes to add to his collection of treasures. Went to the Children's Theater Company production of The Cat in the Hat on Sunday and power went out in the whole neighborhood about 1/3 of the way through… after waiting about 15 minutes, they decided to go ahead with only emergency lights and no sound system. It speaks highly of the cast and the production that it was still very enjoyable. But it sounded like what may have been the biggest hit of the weekend was bedtime stories from Papa John. When our kids were little he used to make up tales of Sing-Lo and Pitti-Sing, which they remember to this day. He chose to tell tales of a Magic Mirror this weekend and our son says both kids woke up talking about it… and they wanted more tales when they went to bed last night! Maybe we're going to have to figure out a way to skype Bedtime Tales with Papa John…

RECIPE OF THE WEEK

Love this recipe for lemon bars from allrecipes.com that I wanted to add to my 'keep' file… delicious shortbread crust topped with lemon custard dusted with powdered sugar… not too sweet, just the right blend of tart and sweet. Allow time for the bars to cool before serving.

BEST LEMON BARS

  • Lemon bars1 cup butter, softened
  • 1/2 cup white sugar
  • 2 cups flour
  • 4 eggs
  • 1 1/2 cups white sugar
  • 1/4 cup flour
  • 2 lemons, juiced
  • Powdered sugar

Preheat oven to 350 degrees F. In a medium bowl, bledn together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9 x 13 inch pan. Bake for 15-20 minutes in the preheated oven, until firm and golden.

In another bowl, whisk together the remaining 1 1/2 cups sugar and  1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust and bake for an additional 20 minutes.

Allow to cool and sprinkle with powdered sugar. The bars will firm up as they cool.
