NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes…and love getting recipes you would like to share!
Had to share this picture of Papa John and grandson Khalen packing boxes for Feed My Starving Children a few weeks ago. After a mostly snow-free winter with temperatures regularly in the 40's we woke up to snow on the ground yesterday… it's about time, this has been the strangest winter. It's been so warm even the creek isn't frozen… it was fun watching the ducks waddle in the snow to have breakfast in the creek. Today is Ash Wednesday… the group I sing with, Hymnus Angelicus, is doing a lenten concert on Sunday… including a cool double choir work by Monteverdi and guest tenor soloist from Cantus.
RECIPE OF THE WEEK
This week's recipe is a colorful Mexican salad without the typical ground beef and salsa. The honey-lime dressing is sweet and tangy, just the right finish for the hearty vegetable salad from epicurious.com. I omitted the radishes, not a hit in our family.
MEXICAN CHOP SALAD with Honey-Lime Dressing
- 2 1/2 cups chopped romaine lettuce
- 1 can (15.5 oz) black beans, rinsed and well drained
- 3/4 cup chopped seeded tomato
- 3/4 cup chopped peeled jicama
- 3/4 cup fresh, frozen or canned whole kernel corn
- 3/4 cup thinly sliced radishes
- Half a ripe avocado, diced
- 1 red bell pepper, chopped
- 1/4 cup crumbled reduced-fat feta cheese
Dressing
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 2 tablespoons honey
- 2 tablespoons finely chopped fresh cilantro
- 1 garlic clove, peeled and minced
- 1 teaspoon chopped jalapeno pepper
Toss all salad ingredients in a large bowl. In a separate bowl, mix dressing ingredients. Pour dressing over mixture and toss again. Season with salt and pepper to taste.
